Potato Skin Chips
Homemade potato Chips
Potato skins are often discarded when preparing potatoes. Instead, roast them in the oven with a drizzle of olive oil and pinch of salt. Treat your guests to a delicious, crispy pre-dinner snack.
Ingredients (serves: 4, as a snack)
The peal of 5–6 potatoes
1 litre natural oil (e.g., canola oil or peanut oil)
1 teaspoon sea salt
0.5 teaspoons chili flakes
Directions
1. Dry the potato skins well with paper towels – the dryer the potato skins are, the crispier the chips will be.
2. Add the oil to a large heavy-bottomed saucepan, and heat over medium heat to 165°C (use a thermometer).
